Story told in oak

At the center of our taproom in the Van Aken District are our two 250 gallon oak Foudres, large vessels meant for long term aging of specialty beers. These American-made tanks were first filled when we opened our doors in 2019 and will be continually harvested and refilled throughout the years.

VOlume one - Released 7/17/21

Our first release (pictured above) is an even blend from both of the foudres, an ochre colored sour ale made from 100% Ohio grown barley and wheat malted by Haus Malts. It combines the personalities of the two different vessels, a soft peach-like aroma from one and zippy sour cherry notes from the other. As the first beer pulled from these tanks there is a mild presence of oak tannins pulled from the wood that rounds out the beer and adds a delicate spice note to the finish.

volume two - released 2/9/22

Our second release blends both foudres with dark sweet cherries, orange peel and a delicate blend of spices meant to imitate Caribbean bitters. The result is an almost red hued ale with layers of complex flavor and acidity, hints of tropical fruit and citrus and an overall refreshing finish.
